Cranberry Christmas Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. This recipe is one of those old favorites, and needs to be revisited! Look for good quality more natural marshmallows, if available! This makes a lot, enough to serve 10-12 people with a dinner. Recipe can be easily cut in half if needed, and it stores in refrigerator for several days.

12 - 16 oz. fresh cranberries, coarsely chopped
1 cup raw sugar
2 cups whipping cream
2 cups miniature marshmallows (or 4 cups, like my Mom would use!)
1 cup drained crushed pineapple
baby greens or other lettuce, as desired

Mix the chopped cranberries (chop in food processor)with the sugar and let stand at room temperature for about 2 hours. Also whip the cream and add the marshmallows and refrigerate for 2 hours. After the required standing time, combine the two mixtures and add the crushed pineapple. Place lots of baby greens or torn leaf lettuce into a beautiful bowl and pile the cranberry mixture over. Serve now, or refrigerate several hours or even overnight.
