Roquefort Dressing

From Dorothy McNett's Recipe Book at Enough for a huge crowd, or give some away. This is from the Pine Cone Restaurant in Merced, California, about 1964.

6-8 oz. Roquefort cheese
3 3/4 teaspoons powdered horseradish
1 3/4 teaspoon coarsely ground black pepper
1/2 teaspoon dry mustard
2 1/4 teaspoons garlic powder
juice of 1 lemon
1/8 cup wine vinegar
1/4 cup water
1/2 cup buttermilk
1 quart mayonnaise

Blend cheese, horseradish, pepper, mustard, garlic powder, juice of lemon, vinegar, and water in mixer or processor. Fold in the buttermilk and mayonnaise. Makes a ton, so enjoy it often. Can be cut into smaller proportions.
