Fish Fillets with Garlic and Herbs

From Dorothy McNett's recipes at www.dorothymcnett.com. Use any fresh fish fillets in season. This is absolutely perfect when cooking for 1-2 people.

2-3 fresh fish fillets, such as snapper or orange roughy
chopped garlic in olive oil with lemon juice and parsley ior other fresh herbs
paprika
semi coarse sea salt
freshly ground pepper

Place the fish on a glasss or ceramic plate. Drizzle with a mixture of olive oil, garlic, lemon juice and parsley. Sprinkle with paprika. Cover with a piece of waxed paper or a few green leaves, such as romaine, kale, lettuce, etc. Place in microwave for 2 - 3 minutes. Check for doneness, adding 1 minute more if needed. Season with salt and pepper and serve with plenty of bread for sopping up the juices.
