Savory Glazed Chicken

1/4 cup maple syrup
2 tablespoons prepared mustard (Dijon style)
1 teaspoon good quality curry powder
2 cloves garlic, minced
1/4 teaspoon sea salt
1 chicken, or 2 Cornish game hens
freshly snipped parsley or other herbs, as garnish

Fill the lid of clay pot with cold water and allow to stand in the sink while you prepare the chicken in the bottom of the pot. Combine the glaze ingredients, and pour over the chicken, turning it to coat well. Drain the water from the lid and place over the chicken. Microwave on high for 10 minutes, then on 70% power (medium high) for 20 minutes. Snip some fresh parsley over the chicken when serving. This is great served with rice or potatoes, drizzling the extra ingredients over.
