San Benito County London Broil

by Ferne Wilford for Beef Week 1997, Barbecue/Grill Division

1 London broil
1 tablespoon Worcestershire sauce
1 tablespoon extra-virgin olive oil
1 teaspoon freshly ground pepper
1/2 teaspoon fine sea salt
1 tablespoon chopped fresh garlic
2-3 Portabella mushrooms
1 bunch fresh parsley

Brush steak with Worcestershire sauce, then with olive oil, pepper and salt. Broil on your barbecue until well seared on both sides, 4-5 minutes. Remove to roasting pan and add chopped garlic. Cook a further 10-15 minutes at 350 degrees in oven with the cover on and 1-2 tablespoons water in pan. Let rest 5 minutes. Slice thinly at 45 degrees angle across the grain. Serve with portabella mushrooms that have been sauteed in a combination of 2 tablespoons olive oil and 2 tablespoons butter. Just before serving add 1 cup of the fresh parsley. Toss and serve along side the meat.
