Chocolate Almond Pear Pudding Deluxe

From Dorothy McNett's recipes at Serve with Irish Cream and Irish scones for a great St. Pat's dessert.

3 tablespoons cornstarch
1/3 cup raw sugar
1/3 cup unsweetened cocoa powder
pinch of fine sea salt
2 cups almond milk
1 teaspoon vanilla extract or vanilla paste
sliced fresh pears, any variety

Whisk together cornstarch, sugar, cocoa, salt and milk in a batter bowl. Microwave on high for 3 minutes. Whisk well. Microwave another 2 min. Whisk well. Microwave another 2-3 min., or until pudding has thickened. Whisk in the vanilla. Slice the pears thinly and arrange in individual serving cups or bowls. Pour the pudding over the fruit slices Cool. Also great served with ladyfingers or other small cookies as desired.
