Spatzle auf Michael Straub

Whisk eggs, adding milk, beer and nutmeg. Beat in flour to make a sticky yet thick and stiff batter. Bring 6 quarts water to a boil, adding about 2 teaspoons salt and 1 tablespoon olive oil. When water is rapidly boiling, squeeze the batter through a spatzle machine into the water in batches. (or use a metal colander to force the mixture through if you do not have a spatzle maker) The noodles are done when they come to the top, about 1 minute. Skim them off into a large bowl, and continue until all are cooked. Serve with meat and gravy, or with fish and more!
