Pears Poached in Red Wine or Apple Juice

From Dorothy McNett's recipes at Use any spice or herb as desired for flavor,such as nutmeg or lavender, etc.

4 firm but ripe pears, such as Bosc
1 bottle red table wine, or use apple juice
1/2 cup raw sugar or honey
1 tablespoon real vanilla extract or vanilla bean paste
pinch of sea salt
1/4 teaspoon nutmeg, or 1 teaspoon snipped fresh lavender

Using a grapefruit knife, remove the core from the bottom of each pear. Bring the remaining ingredients to a boil in a pan large enough to hold the pears upright. Add pears, cover, simmer 35-40 minutes, or until tender. Remove pears to a dish, and bring the liquids to a rapid boil to reduce the liquid to a wonderful syrup to be drizzled over the pears at serving time.
