Glazed Sweet Potatoes with Goji berries

2-3 sweet potatoes
Scrub and peel potatoes (peeling is optional, sort of depends on the potato skin). Cut each one into slices or cubes. Place in glass or ceramic batter bowl. Cover with a glass or ceramic lid. Cook in microwave using 3 minutes per potato as a guide, or cook until just barely tender. A little underdone is best. Heat a wok or saute pan on high, and when very hot, add butter and quickly add sugar, lemon zest and juice, salt and pepper. Stir to blend. Add the potatoes, and gently cook and stir several minutes to glaze. Toss in the goji berries and serve.
