Cook just 1 fillet in a small skillet, or several in a larger pan. 1-4 or 5 fresh fish fillets, such as snapper, sea bass, sable fish, salmon etc. Place fish on a plate and sprinkle with salt, pepper and herbs as desired. Heat olive oil in a heavy bottomed skillet or saute pan on high heat just until the oil starts to give off a little haze but is not smoking. Reduce to medium and quickly add the parsley and cook and stir 2-3 minutes as it starts to wilt and then brown a little bit. Remove parsley to serving platter and set aside, stirring in more olive oil to make a desired sauce consistency. Quickly add the seasoned fish to the pan, using just a tad bit more oil if needed, keeping on medium high heat. Cook several minutes on one side, gently turn, and continue to cook until the fish flakes easily. Do not over-cook. Serve with the parsley. Recipe created 1998-01-12. © 1996-2013 Dorothy McNett.
