Cinnamon Apples with Vanilla Ice Cream

From Dorothy McNett's recipes at www.dorothymcnett.com. Enough for a wonderful sauce to serve warm over vanilla ice cream, or with a readymade pound cake, sliced. Apples with ice cream has been a favorite dessert in New Mexico for years, after eating a nice spicy Southwestern meal of tacos and more!

2-3 apples
1-2 tablespoons raw sugar
1/2 - 3/4 teaspoon ground cinnamon
pinch of sea salt
zest of 1 orange

Core the apples, and then cut into chunks. Put into a glass or ceramic bowl, add remaining ingredients. Cover. Cook in microwave 4-5 minutes. (Calculate the cooking time, using 2 minutes per apple as a guide). You can add raisins to this, also, if desired. It is also good with cooked oatmeal for breakfast.
