A pefect vegetable to serve with baked ham or other meats! 1 bunch broccoli, washed and trimmed Wash the broccoli, and cut off about 1 inch of the tough ends. Using a paring knife, trim back any hard or tough looking skin on each stalk. Then slice, at an angle, into evenly shaped pieces. Put into a glass or ceramic dish. Cover with a lid or waxed paper. Cook in microwave using 5 minutes per pound of broccoli as a guide. (1bunch usually takes about 4-5 minutes, for instance) In meantime, mix together the mayonnaise and the lemon zest and juice.
