Vegetables of the Day

From Dorothy McNett's recipes at www.dorothymcnett.com. While your roast beef or other main dish is waiting to be carved, quickly stir up some vegetables with some bread slices and your meal will be complete!

any quantity, any kind, cut up vegetables (eggplant, zucchini, mushrooms, onions, potatoes, sweet potatoes, carrots...)
2 tablespoons extra virgin olive oil
seasonings, as desired (hot paprika, herbs, ginger, etc)
sea salt
freshly ground peppercorns
1-2 teaspoons butter or olive oil
1-2 slices whole grain bread or buns
2-3 tablespoons red wine
snipped fresh basil or parsley

Wash, cut up vegetables slicing them at an angle. Heat a saute pan or stir-fry pan over medium high heat. Add oil. Add vegetables. Cook and stir to your desired doneness, 3 - 5 minutes. Remove vegetables to a serving platter and season as desired. Return pan to heat, add the butter or olive oil. Grill the bread slices on both sides briefly and remove to vegetable platter. Add the wine to the hot skillet and using a silicone spatula stir the mixture, bringing up any browned bits in the pan while reducing the mixture slightly. Pour over the vegetables and add snipped basil or parsley.
